"Folk" is quite a wide-ranging genre. I'd suggest you get an album which has tracks from a variety of different artists and decide what you like from that. A couple that I have are "the best of British Folk" and "an Anthology of English Folk Music", but there are loads out there - If you go to a music shop, there will almost certainly be a compilation CD there. If you have an mp3 player, it would be worth looking at the itunes essentials folk music page.

Well, assuming you mean American folk music and not Irish or English or Peruvian (perhaps a big assumption), the gold standard is the Anthology of American Folk Music, compiled by Harry Smith. But I don't imagine you're looking to drop $80 on a first date, as it were.

So I'd recommend the American Roots Music 4-cd boxed set that accompanied the PBS miniseries. It covers pretty much the whole history of American folk music: North, South, East, West, hill, dale. It retails for about $45, but several Amazon Marketplace sellers have it for under $30.

If even that seems a bit like overkill, there's a sampler cd from the series, but distilling 4 cds down to 19 tracks means a lot of essential stuff got left behind.

My wife's friend and her sisters band are called The Midden, they have two albums out called La Bordel and Pi:galo we went to both album launches, folk is not really my taste but they were fantastic and are highly recognised as young and energetic, played the MOD, Celtic festival in France and loads more?! Try them out, you will love them.

I suggest you listen to some folk radio. A lot of stations have streaming shows. My favorite is WUMB- I listened to it when I lived in Boston. You can look around for streaming folk music on their site.
