The best way is to try one and determine if it's ready then start picking. You cannot go by time of year unless you have a history of when they should be ready baised on prior years. At my place depending on the type they are ready from around 1st of July till Oct. with the cooking ones ready early, the eat off the tree ones from mid Aug. till Oct.

If you lift the apple up from underneath and it breaks off the tree without you having to pull it then it's ripe.

you may notice they start to drop but if you gently handle the fruit and twist slightly if it comes away easy you know its ready. if it feels like tou are pullinf it off leave it for a couple of days.
