Jacques Villeneuve overtaking Michael Scumbagger, Jerez 1996. He overtook on the OUTSIDE, off the racing line and in heavily marbled rubber, and made it stick.
Scumbagger wet his pants and after the race said Villeneuve was crazy. Only years later did Scumbagger finally admit Villeneuve outdrove him, that he, Scumbagger, wouldn't have had the nerve to do it.

We may have to go back to the 1993 European Grand Prix at Donington where Ayrton Senna made a series of audacious overtaking manoeuvre on the opening lap and in the rain.

I'm fairly certain this isn't what you had in mind, but the many times Ferrari managed to get rules changed midseason to outlaw the competitions technology; when they were having a bad season seems pretty audacious to me.
