No, I'm not planning a poaching expedition, it's research for a novel. Currently I have her sticking her hunting knife up the roof of the rhino's mouth. Would a hunting knife be long enough to reach the creature's brain? I've seen it done before with things the size of swords, like in Harry Potter and the Chamber of Secrets.
(I know that a real rhinocerous would not actually open its mouth to roar at her, but this is a demon in the form of a rhinocerous.)

If your creature has the same horn as a traditional rhinocerous has, a hunting knife would not be possible to use. Your character would bite the dust. Plus, it isn't the brain you'd be aiming for in order to kill it necessarily. If you can puncture a vital artery, you'd have more success. I'd say a longer weapon for sure...with a thick blade even or one very sharp in order to pierce through the rough skin (if your creature even has such skin). But hey, a novel is a novel right? Fiction and all that. Anywho...Good luck with writting! ^.^

A long distance weapon . . . preferably from a place the rhinocerous cannot reach you in a charge, like a helicopter. Rhinos have very thick hide that would make hitting it with a bullet problematic because it might not go through . . . maybe throw a knife at it dippen in poison.

Depends on how big you want her hunting knife to be. I've known people who have had pretty long hunting knives.
And I think it would make a lot more sense if she just stabbed it from under the jaw through to the beast's brain. But that's just me..
Heck, she could break of it's own horn and stab it with it. Make it like some mystical, ironic thing that the beast can only be destroyed by it's own enchanted horn or something.

The hero, armed only with his knife, that was blessed in the tears of a thousand virgins, stared with steely confidence back at the demon rhino. The monstrousity dips its blackened ivory horn and charged. As the beast neared the hero's free hand sprang forward and grabbed the horn. Taking advantage of the momentum the hero himself forward in one motion while stabbing into the side of the rhino's head. Crunch went the blade as it sank deep into the demon's ear.... puncturing its brain.

Have a man birthing out her canal. like in Ace Ventura when Nature Calls. This will be sure to work. Or you can have the rhino swallow someone and they have a two sided harpoon and when they are swallled they can fire it out both sides of the animal you know like Kevin Costner did on Water World with the huge fish monster thing

Sorry, just can't think of anything mean I'd do to a rhino. I respect and like them too much.
But if someone put a plug in it's butt for a day or two though, it would explode. Can you imagine the stench? And all the free methane gas!

Definitely multiple hi-caliber shots in the eyes. Have your heroine packing a Colt 1911 .45ACP pistol or H&K USP .45 (like Laura Croft had in the movie with angie jo--hers had muzzle brakes).
Empty the clip: Colt is gonna have 6-7 rounds. HK up to 13 (military clip plus one in the chamber)
Oh, yeah and hollow points are much worse if they don't expand until they reach the brain. You might have her alternate hollow points and full metal jacket rounds in the clip, just to make sure.
I take it she has to get up close, for the sake of audience thrills.
Best way would be a shot to the head with a rifle with very high caliber, or with the bullets doped in nicotine free-base.

Rhinocerous' are huge... a hunting knife probably wouldn't cut it.
You might need to step it up to a longer blade.

You could superglue his lips shut. That way he can't eat or drink. The only way to open his mouth would be to apply some acetone to the glue. Since he doesn't have thumbs it would be pretty difficult, he woul just spill it all.
