If you want to show total company sales over a period of time, such as 3 years, use a line chart. If you want to show sales in a single year by department, use a pie chart or a bar chart.

A pie chart is often good for comparative purposes -- department vs. department, company vs. company, or company vs. industry -- since it can highlight the relative effectiveness of each. A line and bar chart have similar characteristics, though the bar chart can be used for straight up historical performance AS WELL AS for comparative purposes (i.e., stacked bar chart). For highlighting an obviously good (or bad) historical performance, though, it defeats the purpose for me (being flexible). Thus, I'd go for a properly executed line chart in that case.
