The variables in your question leave much to guess. Generally the slabs do not have to have any tilt from vertical if they are installed with about a 50% exposure on the down hill side, 12" slab = 6" exposure.

Typically, your depth of footings need to have 2 things. It should be 2/3erds the height of the wall. If your wall is 3' tall, the footing depth should be at minimum 12" depth. It should also be below your area frost depth. Heaving can be a problem and you need to be sure your in stable soil conditions. If your wall exceeds 4' tall, best to have a professional design it, like a landscape architect and a structural engineer. Always best to have a professional or local contractor verify your idea and design.
