-marketing
-economics
-hospitality and recreation

which universities would be the best choice to learn for these courses?

If you are talking about undergraduate degrees, the first two are so widespread that there is no best place to take them. Go to the best school that you can overall. The only restrictions I would consider is that if you are looking at marketing, there should be an undergraduate business program (some of the best business programs focus only on graduate degrees and don't include an undergraduate program) and that you look at going to a place where you will learn directly from their good
professors, not from graduate teaching assistants or part-time adjunct faculty. While some of these can be good, and just about every school uses some of them, there is usually less quality control and too many T.A.'s or adjuncts can mean a program which is not given a lot of attention by the school

Hospitality is different, and having gotten my own undergrad degree in that, I know that you need to consider different factors. Hospitality cannot be taught in the classroom alone, so the school needs to have expensive and elaborate facilities to support a good program, along with good faculty. I found a ranking of schools online, and they put Purdue as #1, Cal Poly Pomona as #2, and the University of Houston as #3 in 2002.

Unfortunately location does matter! Being in the industry of university marketing for so long, location is definitely one of the reasons why you would move to a totally new country.

The other one will be how much you regard the ranking.

Of course for the faculties you have mentioned, UCLA and MIT springs to mind. Not sure why. You might want to check out Melbourne and UNSW too.

Marketing, you'd probably need to attend a university in the US or Canada. A lot of UK universities don't really offer "marketing" as such.

For hospitality, check out Cornell University. They have a very strong travel and tourism program.
