We learn many repertoirs for phycical activities like walking while chewing gum. We learn to sneeze with our eyes closed because it is a natural (protective?) response against the unknown cause of the sneeze. It should be possible to learn to sneeze with the eyes open in a lab test where no damage to the eyes is at risk, and you are ready for the sneeze. Ahhh Choooo!

You can sneeze with your eyes open, but virtually no one does. Go ahead and try it (although it is difficult), your eyes won't fall out.
