Let's say you want to study to be an environmentalist. Which countries would you consider to have the most credibility in that subject?

It is to do with ecological footprint.

An ecological footprint is the amount of land and water area a person or a human population would need to provide the resources required to sustainably support itself and to absorb its wastes, given prevailing technology.

According the interactive map on pthpp it look like the Gabon in Africa has the biggest net minus deficiency at -18.5 whereas the USA is a +4.9

Those who comsume less will have a smaller footprint. Countries in south america, afrcia as opposed to western europe and the United States
