If you are doing a DIY jobby then I don't think you will be able to do anything about it,but if it was in the last couple of Hours go back to where ever you have Ordered them from and tell them.

In any case had you gone to a proper Window Company they would have sent someone to do the Measuring and then a Surveyor would have been to check Measurements for the Company.

Do hope you are not in a catchment where you have to have permission to change Style of Windows.

Councils can be very Funny about change without permission.

When you say :Doors: I assume they are either Patio doors or French doors. In either case there is nothing you can do to the actual doors. the only hope you have is to widen the opening, which will not be easy if brick or render. I would suggest you speak to your supplier and see if he can sell them to someone else as a :missmeasure: Often used in New Build situations. Then reorder in the correct size. Remember the old saying, Measure twice, cut once.

Contact the company right away. It may just be a case of them ringing through and changing their order. If so, then you'll have to pay for them and either get them adjusted, or buy new ones.
