Octopusses Garden - The Beatles.
Ringo sings lead on this, and the other guys put in an excellent close harmony backing. Recorded as a fun song, but listen again and you will see that the backing vocals are top notch!

Good question. I've been having a think and the song which immediately springs to mind is The Rolling Stones' "Gimme Shelter". Merry Clayton's performance on this record is astonishing. She cut a version of the song herself but I've not been fortunate enough to hear it.
