Thanks for all helpful answers on religion/spirituality in LA literature. Now does anyone know of any Latin American novels which deal with catholicism?

How about A Night in Chile by Roberto Bolano? Sorry that's more another question than an answer. I haven't read it myself but it's apparently about the final thoughts of a dying priest and covers a lot about modern-day Chile and especially the doings of Mr Pinochet. Otherwise, I don't know of any novels that deal solely with Catholicism. As politics and religion were so mixed up in so many LA countries, there was a lot of suppression - both by governments and self-suppression by many writers who didn't want to find themselves dead.

Good luck with finding more books.
