You could try with some Australian/New Zealand species. This continent was isolated for such a long time, that many "weird" animals evolved there.
Some examples:
The kakapo: this is a parrot, but unlike all other parrots, it is not green, it is not active during the day, and it is almost flightless. It's nocturnal and it looks rather like the cross between a parrot and an owl:

Kiwi: this flightless bird has feathers that look like "hairs", and lays an egg that is extremely large for its size.

Lyrebird: this bird looks like a pheasant, and it is an extraordinary imitator of all kinds of sounds, both natural (other birds and animal sounds) and man-made (like the sound of a chainsaw or a camera).
This is a video from David Attenborough's series showing the imitations it makes (recommended!):

Other "weird" animals from around the world.
There are some sponges called Venus's flower basket (genus Euplectella). The sponges themselves are extraordinary creatures (especially because they don't look like animals at all! and their skeleton is made of glass-like silica) but the curious thing is that there is a species of small shrimps (genus Spongicola) that live within the sponge (as in a cage) and cannot get out. A couple of these shrimps get inside the sponge while they're young and small, and they remain there (that's a really monogamous marriage LOL!).

This is what the sponge looks like

And this is the shrimp:

I could go on adding cases... I recommend frogs, as they have some of the most extraordinary reproductive habits ever: some incubate in their stomachs, some carry their eggs in their vocal sacs (near their throats), others on their backs... if you're interested, let me know :-)

Ferrets are funny and mischievous. Hairless rats kinda on the ugly side but make wonderful pets. Mali uromastix is a neat lizard with a hard spiny tail but a very soft body and is a good pet. Tarantulas are eye catching and come in lots of colors. Good Luck on your project.

Echidna - a porcupine-like animal with small snout
Colourful sea-slugs and octopus
Hairless chinese dog
Try searching up some exotic species of spiders and bugs.
Animal mimicry -you could put pictures of real and fake speceis that try to mimic the colours and features of one another. See if people spot the difference?

The coelacanth, recently found off the coast of Madagascar. Its this fish, WITH LEGS, that everyone thought was extinct. But they found one and now it is in some special room at the Smithsonian. They are really rare but they are thought to be an indicator of evolution! I think that is wild.

A buffalo (you could draw it with wings)
Rino
or a goat, there is one species that will pass out if you scare them...don't know how you'd draw that though, it would probibly look like it was dead! Ha ha!

you should choose an animal that represents some aspect of your personality, because people will associate your art as a reflection of who you are.
