Unless you killed someone or are a previously convicted offender you will be on what is called "Informal Probation". You don't currently report to a probation officer and that would not change.
Enjoy your trip, you've learned your lesson (I hope) and if you can, ask in the countries you visit about drunk driving penalties. The responses will make you very happy that your DUI was in Texas and not in Europe.

The only reason you'd be restricted from leaving the country is if there was a warrant for your arrest for some reason.
If you've already done the time for the DWI charge, then there definietly shouldn't be a warrant.
You can't drive overseas until you've re-instated your driver's license in the states... but unless you have an upcoming court date, you shouldn't have any travel restrictions.
You can always check with your local authorities to make certain there's nothing preventing you from traveling.
Since you don't have a current driver's license, you'll probably need a second photo ID in addition to your passport.

I don't know. You should ask whoever's in charge of your probation. They'll be able to tell you.

Do you have a passport? Did they take it away? If you don't have one then you can not go. You should check to see if you are on the "No fly" list.
But, I am betting that they will not let you go, because you might not come back in their minds. And they will not want to take a chance especially in Texas.
Texas and Oklahoma have the worst reputation of states that are not kind when it comes to the law.
