I'd recommend Sastun by Rosita Arvigo. She and her husband--both doctors, I believe--went to South America to help out the native people in the early 80's; she became apprenticed to a Mayan healer. Really interesting look at how the people there have found cures for so many things in the rainforest.

I've heard that A.J.Cronin's "Adventures in Two Worlds" is a really good book. The parts where he works as a doctor treating workers in coal mines is supposed to be particularly moving.
