If your email is an exchange server you can retract it, else you're probably out of luck.
You might want to check your email settings for future use.
You can determine when the mail actually goes out. If you don't send immediately, then you can fetch it back from your outgoing mail if you change your mind.
OH! There is a piece of software that will allow you to retrieve it, the stuff the CIA, NSA, DIA, etc... uses, but it'll cost you about half a million dollars to buy! I was recently researching this very thing for a project at work.

I agree withtopdog. If you're using Outlook Express you have the option to delete the message from the receiving PC, but it will still stay on the server.

No. Not at all. After an e-mail is sent to another mail server, that data is on that server.
