Well it is certainly difficult to name only 5 movies. It is also hard to just name any five movies instead of 5 romances, or 5 comedies, or whatever... But I will give it a shot...
Ray - with jaime foxx was an excellent movie well deserving of all the awards and success it recieved. It was well written, expertly acted by foxx as well as all the other cast members, and a wonderful and important story to tell.
Saving Private Ryan - the best world war 2 movie made after the year 2000. i would say the best in a much longer time span than that, but that is my opinion. Steven Spielburg was excellent in the style in which he examined and told the story of D-Day. Tom Hanks and the excellent ensemble cast were superb. Matt Damon, Giovanni Ribisi, Ed Burns, Barry Pepper, Vin Diesel, and Tom sizemore were all fantastic.
The Notebook - This movie was the best romance of the last 6 years. The Author wrote a true story about his wife's grandparents, and it translated beautifully on the screen. Everyone who has ever seen this movie has cried and felt something familiar. The acting and directing were superb, and we were introduced to a fantastic new actress, Miss Rachel McAdams.
WOW THIS IS HARD
ok number 4... i'm going to go out on a limb and include a comedy...
Wedding Crashers - although I do not think this is one of the best 5 absolute movies of the last 6 years, it is certainly the funniest. Vince Vaughn and Owen Wilson are hilarious, and its a damn good movie for anyone to watch. You then also get killer performances from Christopher Walken, Rachel McAdams yet again, Jane Seymour and others. It has a serious side towards the end, but all in all is a great comedy...
Crash - Ok, this is a fantastic HUGE ensemble drama that turns and twists a hundred different times throughout the film. No wonder it recieved the Oscar for Best Picture this year. It was a totally deserving award. It is racially charged and full of action and emotion. IT is just the best big ensemble picture in a long time that is taking on such a delicate topic.
others i have to mention:
The Pianist
Oceans Eleven
Walk The Line
Remembering The Titans
Miracle
Munich
Basic
Napolean Dynamite
The Wedding Date
The Italian Job
Castaway
The DaVinci Code
Gladiator
A Beautiful Mind
many many more

I don't believe in definitive "best" lists, but here's a more inclusively international (and less escapist) take:
1. "Cidade de Deus" ("City of God")
2. "Lord of the Rings" trilogy
3. "Finding Nemo"
4. "Hable con Ella" ("Talk To Her")
5. "Irreversible"
