Because that's currently the most "popular" Hispanic group. 10 years ago it was Puerto Rican. The same as when you come from ANY Caribbean island, you're Jamaican.

Because we're stupid. I consider myself to be pretty intelligent, but, I have to admit, when I read your question I was like, "...oops - they're not?" Swear. We learn something new every day. I promise to research the Hispanic nationality (some are Puerto Rican, right?). See, there's hope for us.

I think it depends where you live. People tend to think everyone hispanic in Florida is Cuban.
