Forget the whole carb craze...and I'd only recommend calorie counting to a degree. Don't starve yourself! Go with foods that have less calories but are filling. Go with a chicken salad for lunch or something, you get protein and it's not very high in calories. The key is exercise...the more you exercise the more you burn (ok, you're probably thinking DUH), but let's say you splurge and eat an entire pie or something - just go an extra hour on the treadmill and you won't have to worry about it!

Calories. The reason carbs are bad is because the contain such a high amount of calories. It is still good to avoid carbs, it is slightly better to get 300 calories from fruit than 300 calories from processed sugar.
Also if you are trying to lose weight you much also up your activity level or else your body will burn muscle instead of fat which will lower your resting metabolism. So when you get off your diet you will actually gain more weight quicker.

I have done both. I like the carb (atkins) I lost alot of weigh and never felt better.
Just make sure that if you do carb counting, to get the right amount each day. It sounds like eating all that meat you would not loose the weight but u do.
Also make sure you take some vitamins, exercise (maybe 3 X's walking if you can)
You might want to make sure its ok with your doc to do it

The best way to lose is to speed up your metabolism...how? activity, and cut out sugars, starches, simple carbs...eat lots of veggies, soy protein, fish, some meat, some poultry, some pork if you are allowed, tons of fruits, high fiber cereals in the morning such as GoLean (an exception to rule) non-fat yogurt and cheese...gallons of water....in 8 months, you'll have shed. I lost 70 lbs. once, 40 pounds this time...it works!!
