Your incoming is usually a 'pop' server and your outgoing is typically smpt

This is determined by your Internet Service Povider. They will provide you with server names for thier mail server or servers. Most incoming mail servers are POP (same as POP3) and most outgoing are SMTP. Sometimes they use names like pop-server."your-isp".com or .net and smtp-server."your-isp".com or .net with "your-isp replaced by the name of your providers domain. Some places use the same name for incoming and outgoing servers. For example mail."your-isp".com or .net would go in both fields with "your-isp" replaced with your providers domain. You usually can find the server names and setting on the ISP's support page along with the other information you will need to set up your mail accounts in Outlook, Outlook Express, or Thunderbird.

I really dont understand what u asked here...
If u are asking about protocols
outgoing -- smtp (simple mail transfer protocol)
incoming -- pop (post office protocol)
but many mail services use their own protocols for sending and receiving mails like yahoo and gmail.
But if u are really asking about servers..then any computer (powerful) can be made as server.
