Guided meditation is really the best for relaxation and especially for getting to sleep. Check out http://www.michaiel.com/ for more information - I own about 6 of these CD's and they've made a world of difference.
Of the three that you asked about (and I've tried them all) I think Yoga is the most relaxing, but knitting is a great way to pass the time while you are waiting somewhere or just watching tv.
Happy relaxing!!

Knitting is proven, bizarrely enough, but knitting during yoga is a fun extreme sport!

Yoga is great, but I always fall asleep during the "om" at the end, and knitting actually PRODUCES something. But if you aren't coordinated with stuff like that, knitting can actually totally screw up your body, mostly in the shoulder and upper back area.

BEGINNERS yoga is very relaxing. It all depends on preference overall, but if you do low intensity yoga, it's very relaxing and spiritual. The harder yoga gets, the less relaxing it gets though.
