The above site will send you brochures and information on all kinds of attractions in Florida. Since you still have over a year to decide, why not contact them?

You can swim with dolphins at Sea World.

Deep sea fishing http://www.orlandoprincess.com/
out of port canaveral....you'll have to drive or take a taxi or town car to the ocean. While you're out that way you could go to the Kennedy Space Center.

Dinner shows like Mideval Times, Arabian Knights, Pirates Dinner Adventure, etc. are nice to break up the monotony of regular restaurants.

You could go to the tampa/clearwater area for a few days....check out that area....go to weeki wachee http://mermaid.weekiwachee.com/ a little gimmicky but...to canoe down the crystal clear river and be able to swim with the manitees is cool...the manitees are there year round. If you like baseball you can go to a Devil Rays game.

You could go to the Daytona area and see the Daytona International Speedway.

Other than that, just sitting on the beach or by the pool is always nice.

Swim with dolphins at Discovery Cove in Orlando. I think you can go deep sea fishing out of some of the Tampa beach points - check out St. Pete Beach maybe? Golf is big in Florida, if you are into it. I also recommend Kennedy Space Center.

Discovery Cove!!! Its a park that is dedicated to swimming with dolphins! I really enjoyed the atmosphere. The swimming with dolphins is just like any other "excursion" I'm sure. But I felt safe knowing this park cares, trains, cleans, ect... for the dolphins. They have a website, check it out.. I will warn you that it can be pricey..but I will never forget swimming with the dolphins! They also have a big "pool" to scuba dive in, which was cool...that was my first experience with that too.. and in the middle of the pool is a glass aquarium with sharks on one side and barracuda's on the other, so it looks like you are swimming right next to them!!
