The C stands for "celeratas" (speed). At the time, physicists did not know that the speed of light was a constant, but they knew it was very very fast.

You might as well ask why a COW isn't called a jackrabbit! General mathematical convention simply states that the speed of light is represented by the letter "C".
Registrations001 suggests it's due to the constancy of the speed of light. Remember that there are MANY constants in math and physics, such as Avogodro's Number, Planck's Constant, and pi. Each of those is represented by a letter or symbol other than C, despite the fact that they are also constants.
In addition, the letter "C" can also be used for many other purposes in science, such as the chemical symbol for Carbon. Names sometimes are just that...

Hey folks, all you guys makie a small mistake:
"C" does not stand for the speed of light, it is "c" !!
Using a capital letter or a small one makes a big difference !!

cause they got nothing else to use.
E= energy
L(maybe for light)= already equals length
what are they supposed to use so lets use latin or greek and come up with c
