Some people, when they touch something cold with one hand, always have to touch it with their other hand to kind of even it up. Why is this?

Maybe they just want to check that the thing still remains cold after the first touch to reaffirm the impression.

It just feels wrong to have one cold/hot hand and have the other one normal temperature.

It's just obsessive compulsive disorder.

You'd be surprised at the number of people that suffer from it, and the many different forms it can take.
