processing. It's the same reason a whole chicken will cost $1.50 a pound, while boneless, skinless chicken breast goes for $6.50 a pound. They had to processe it more, which takes time. And as they say, time is money.
And people pay it. Everyone wants as much money as they can get for their goods and services. If someone is willing to pay you $20 to mow their lawn, why would you take $10?
