My fiance's birthday is comming up on the 6th of September and I want to give him a very special birthday since he does so much for me and he is just a wonderful guy. Any good suggestions as far as what to do and gifts?

buy a really big box that u can fit in and then when he opens it then u pop out in nothing but a smile and a birthday hat. ^_^

Yes, give him a day to himself! Maybe a round of golf, or a day to play tennis, or whatever he might be interested. Or get him a good manly massage at a spa. Give him a day WITHOUT you around and let him get some air and relax! He'll think you are the most wonderful woman in the world! Godloveya.

It's hard to say without knowing anything at all about him or his interests, but his hobbies are a great place to start! How about a weekend getaway to someplace fun? Really nice cuff links (if he dresses for work) , tickets to a game if he's into football?
