Apart from the hydrophobic effect that shiara blade is mentioning there are also intramolecular interactions of the side chains of the amino acids with each other (H-bonds, ionic bonds, possible S-S covalent bonds) and with the backbone (H-bonds) which lead to secondary and tertiary structures.
