I know one method but it is too lengthy to do in minutes using only mind calculation.

First find that day in the current year (this year, for instance).
If the previous year (last year, for instance) was not a leap year then May 2, for instance, which fell on a Tuesday this year would (and actually did) fall on a Monday last year. But May 2, 2004 was a Saturday, since 2004 was a leap year.

Here is the calculation.
Suppose you were born on August 31, 1979. Then today, Thursday would be your birthday.
Since 1978, these have been the leap years--1980, 1984, 1988, 1992, 1996, 2000, 2004 (7 leap years in all).
Now since you would be 28 years old. 28 divided by 7 has no remainder, so we expect August 31, 1978 to be a Thursday; but we have the leap years! Fortunately, there are 7 leap years in this case! 7 divided by seven leaves no remainder.
Therefore, anybody who is 28 today was actually born on Thursday, August 31, 1978.

Here is another example.
Say your little cousin was born on August 31, 1998. She would be 8 today.
We had leap years 2000 and 2004 (two leap years).
8 divided by 7 leaves remainder 1, so we expect her to be born on a Wednesday; but we have 2 leap years so we have to push that day back by 2 and we get Tuesday. Anybody who is 8 today
was born on Tuesday, August 31, 1998.

Suppose you want to find out what day your 80 year old grandfather (today is his birthday) was born.
The last leap year was 2004 when your grandfather was 78.
78/4 = 19 remainder 2, which means your grandfother has seen 19 leap years. Now 80/7 = 11 remainder 3; so we would expect grandpa's day of birth to be a Monday (since Monday was 3 days ago). But we have the 19 leap years. 19/7 = 2 remainder 5, so we go back 5 days before Monday, which is actually Wednesday.
So grandpa was born on Wednesday, August 31, 1926.

Now, for everyday dates.
Suppose you want to find out what day was January 30 of this year.
January gave us 2 full days from January 30-31, February had 28 days, March had 31 days, April had 30 days, May had 31, June had 30 days, July had 31 days, and we have seen 30 full days in August so far.
2+28+31+30+31+30+31+30 = 7(30)+2 = 210+3 = 213
7 divides into 213 leaving a remainder of 3, so 213 days ago was a Monday (3 days before Thursday). So, January 30 of this year was a Monday.
