I would guess that they would start to turn black as the sulfur in the protein disulfide bonds react with the copper to form a black copper sulfide, CuS.

they will probly start to turn brown with out any cover on the or they will start turning yellowish if they arnt in the frige. but they wont taste good if you try to fry them up most likely.

I would guess blue. Most copper compounds are blue.
