If I have, let's say, 3 monsters on the field and my opponent has only one, can I first attack his one monster with one of mine, and after that battle go on to attack his life points directly with my other two monsters if he hasn't got a trap or spell to stop me ?
Can I still attack with other monsters even if my opponents monster was not destroyed by my first attack, eg my opponents monster is in defence position ?
Can I go on to attack his life points with my other normal monsters even if his defence monster destroyed my first attacking monster ?
Or is it the case that as long as he has a monster on the field, however weak it is, that my attacks must stop unless that monster is destroyed/sent to the graveyard. ?

No. Your opponent's monster would need to be destroyed first, unless your monsters have a special ability that allows them to attack the life points directly.

But...Yes, you can continue to attack your opponent's monster with your other monsters if the first attack didn't destroy it, even if it is in defense position.
