Dig a hole , build a big @$$ fire let it burn til its red hot coals , toss the pig in , cover with dirt , Let in ground til done !

I have not personally cooked one but my Husband has and this place we go to it is motorcycle rest stop they have lou-ows once a month and cook them in the ground
