I'm going to take the word "hardest" to mean "played by really tough people I'd be scared of" - rather than "difficult sport".
(For example, I'd call Mike Tyson a HARD CASE - just to give you an idea of the context I am using this word in)
In which case, I'd call the Irish sport of Hurling the hardest sport. It is very energetic, very fast, great fun to watch, and always seems to end up with lots of blood and split skulls by the end of a game.
Although I was lucky anough to meet the all-Ireland Hurling champions about 10 years ago (it was the Clare team, anyway) and they were a really nice group of people, not scary in a social context at all. But very HARD AND SCARY out on the field, eeek.

American Football. Intense training and getting knocked down alot. As far as skill is concerned, probably gymnastics or figure skating. Long hours of training and the need for calculated precision.
