Its just an expresion that people have the tendency to use A LOT. But if you read a certain message, they are unconciously assuming that you already know what they are talking about, hoping somehow that you'll "catch their drift".

It's a meme, which is like a social echo. Because someone probably said it in the eighties (meaning it literally), and then all his friends started saying it, it spread out across the world.

I would think that those individuals saying "you know" often are trying to include you in their thoughts. Maybe they feel alone, and want company in how they are feeling or what they believe.
