If you like stuffing bell peppers give pimientos a try, I found that if you harvest them when they are still green (just starting to turn red) they don't have as tough of skin and they are not as large.
try stuffing them with Mexican sausage and rice wrapping them in foil and cooking them on the grill.

I love all the colored varieties, red, green, yellow, purple. Don't forget some jalapeno peppers (even if you don't eat them, dry them out and string them together to put in your kitchen) Make sure to grow hot peppers far away from other varieties as the sweet ones can "pick" up the "hot" stuff

Grow some "false alarm Hybrid" types. They're really fun to use on friends. Tell them its very hot, and dare them to eat it. ^_-
IIn reality its a mild heated pepper that just looks hot and spicy. its color is bright red. You would think its pretty hot, but its actually very mild and tasty. Goes good in salsa.
or for something really unique, try Filus Blue. The Purple peppers!

jalapenos, serranos, tabascos, bell, cubanelle, poblano. anaheim, hot and sweet banana, habaneros, cayenne, pequin, thai dragon and black knights. Thats what I grew this year. Yummy. Be sure to put match heads in the hole before you plant. They love sulphur.
