Definitely Paddy's in Sydney and Queen Vic's in Melbourne.
Not too sure about Gold Coast as there are many souvenir shops, especially along the coast. Good deals but just watch for t-shirt quality

Sydney - Paddy's Market
Melbourne - Queen Victoria Market
Gold Coast - lots of little ones scattered around, or Harbour Town (discount brand names shops).
Have fun, if you're from America, your dollar will go a long way!

I went to an arts and crafts one. It had great things some were made by skilled artisans and others were not. It was in downtown Melbourne. It was right by a museum with waterfall type windows. I am sorry I do not have better details I am an American and I was just traveling. I went over Christmas time.
