There are two approaches; both ways work.
The first is to go to the worksheet and left clic and hold on the upper left cell in your worksheet, then drag the mouse over to the cell that is furthest right on your worksheet. This will highlight adjacent cells. several cells. right clic on the cells, choose format cells, choose merge cells, tell it "ok".
The other way to do this is to actually go into the header of the page. At the top of the page choose File, Page setup, then choose the tab that says header/footer. Choose custom header. Enter the text you want in the Center section. You can also clic and drag over the text you entered and choose to change the font, make it bigger, etc. Tell it ok to exit, then to see how your header looks on the page, do a print preview. If your header is too low on the page, etc, go into the page setup again and choose the margins tab. Change the number shown as the "top" to .75, or .5, tell it ok, and see if you like it's position better when you print preview it. Change it again if needed.

Take the top line (or the one you want the header in) merge it the width of the page, and select the center option in the tool bar for that box, then type.

if you want the heading with in a certain cells do what the person above me said. If you want it to be the heading of the whole document then go to page setup and put heading for the whole document.
