In polite enviroments (Theatre, Non-Rock/Pop music events, Opera) there should only be applauding. If the preformance was especially good you can do a standing ovation and say "Bravo" .Anything besides that is rude and very much frowned upon.
Other places you can hoot and whistle.

These are types of appreciation I consider for my work place subordinates at my work:
1. Say "thank you." Show your appreciation for their work.
2. Know people's interests well enough to present a small gift occasionally. And, if you can afford to money works nice.
3. Almost everyone appreciates food. Bring in bagels, dough nuts, cookies or cupcakes, that you've baked personally. (Another hint? Bring chocolate - chocolate anything).
Last, but not least, provide opportunity. People want chances for training and cross-training. They want to participate where their talents are noticed.
Alternately appreciation, say for example, in a theater or show you attend (you mentioned applauding) it is nice to stand, congratulate people personally if possible, and bring gifts (chocolate always works well here too...lol).

a smile, a hug, a kiss, a rose sent along with a special note, a phone call to tell them how special they are to me and to thank them. there's all kinds of ways to show appreciation and let someone know just how much they or what they did meant to me.
