At Disney, they 'turn down' the water pressure on Splash Mountain so people will still ride it. (We asked a Cast Member about this when we went to ride it in December.) You can even tell that the water pressure is not as strong as it is in the summer. As far as the water ride at Animal Kingdom... not sure, but that one will get you DRENCHED if you are sitting on the wrong side of the car when you go gown the waterfall (from personal experience!)
I would definitely recommend Splash Mtn in Dec!! It does get cool in Dec, but the sun will still be shining and the little amount of water that does get on you will dry out fast!

As a former cast member I can say yes. However "Jorney to atlantis" is not a Disney attraction, that is a Sea World Ride. The Temps in central Florida in December can be pretty chilly, Ranging from 40F-60F day time temps(30F-50F night time).
Bring a rain suit(pants and top) or a change of clothes. As you will get wet on the Kali River Rapids at Animal Kingdom. Splash Mountain isn't as bad an a poncho will do fine. You really don't want to get soaked you will be miserable walking around the parks in wet pants, that holds true in the summer as well. Take notice of what is being sold at the end of said rides, (towels shirts, shorts, etc :-p ) well layed out by Disney.
The water parks (Blizzard Beach, etc.) most often close for the winter season.

A lot of people will still go on but sometimes they will buy those Mickey Mouse ponchos and wear them during the ride so that their clothes will stay dry. Also, I always see people in the restrooms during that time drying their clothes in those air dryers. Some wil buy a new set of clothes as souvenirs too.

At disneyland they usually have those rides closed for repairs. I've been on splash mountain in January- it's not too bad. 'Specially if you go in the early afternoon around 12 or 1. Anything later than that and it'll be dark before your clothes dry. It's not like the log jammer at 6flags where you're totally drenched and have no possible way to dry out.

Yes, weather permitting, I've gone waterskiing or jetskiing on Christmas day in past years, although not in the last two years. It just depends on your personal preference

Amazingly enough, they do. I never thought it was quite warm enough for a water ride. My daughter actually went swimming, but the pool was heated. She was freezing walking back to the room.

during the mid day it can be warm enough, however, sometimes the evening gets a little cooler.
