ping (especially in multiplayer games) is the time needed for a data sent from your computer to the game server, (usually) measured in millisecond.

Basically, computers (or in your case, the game) measure ping time by measuring the interval of time when the computer sends a "ping" (data that asks the server to "ping" back, sometimes the return ping is called "pong", in reference to the game ping-pong) to the return "ping", divided by 2. [ping time = Interval of ping and pong / 2 ]

If your ping time is too long, that means you'll feel latency (more commonly known as lag) in playing the games. Latency is especially dangerous in a fast paced game (like CoD), since it is possible that in your screen, you killed a player, but in the other player's screen you're the one that is killed. This makes a conflict. A game would usually "first come first serve", which means, the first data that COMES TO THE SERVER COMPUTER, is the one that is used to continue the game. If your computer's latency is high, this would mean, your scenario of the game is rejected, and the game would continue by you dead.

Some of these fast paced game would disconnect you from the game if you have an unacceptable ping time.

FYI: Ping time is not related with your connection speed. You may have a really fast, broadband internet connection such as 1Gb/s connection, but have a high ping time such as 1000ms. While you might also have a really low ping time, while using a normal broadband connection. (dial up usually have a slightly higher ping time though). If you find that your ping time is unacceptable, the best thing you can do is to change ISP.

Summary:
Ping is the time needed to send a data from one computer to another computer.
