Periodically, without a pattern. For example a light that flashes every once in a while, but not on every second flashes intermittently.

It means he did not study literature and writing consistently. He'd enroll in these classes occassionally- not like a literature major.

it means every once in a while...in this context of your example it probably means he enrolled in literature and writing courses at two different times

Sometimes he did and sometimes he did not. If your car has an intermittent knocking-noise, that means sometimes you hear it and sometimes you do not hear it.
