The essence of the flowers are to attract insects or other pollinators so that pollination can occur. It just so happens that night scented stock attracts nocturnal pollinators.

One of the most powerfully night scented plant I know of is honeysuckle it only ever produces a really powerful scent at night. This may be just to attract night flying insects.

Mmmm. Night-time pollinators. I've always wondered about my nicotiniae (tobacco plants) smelling so lovely too, not at all like tobacco pong. Perhaps someone knows why not, and why are they called tobacco plants then?
