It makes it difficult to perform maintenance such as changing spark plugs, replacing components, etc.Is it done on purpose to deter us from working on them? I would much rather give up seating or storage space for a bigger engine compartment.

Numerous reasons.

They want you to believe that they're trying to fit everything in a smaller area to make the car lighter overall to save you gas mileage. BUT

What they don't want you to find out is that having everthing jammed together increases the flat rate labor hours to bring in the big bucks for the dealerships.

And that they don't want you to be able to work on your own car. That's why all the special tools and electronic diagnostic equipment that you'd have to spend thousands of dollars on to do things yourself.

That's why my wife and I have driven a '66 Chevy for the past 20 years. Easy to work on, fairly simple to diagnose, all the parts are still available and it's a darn good looking car.

I have NEVER gotten a car back from a mechanic but that I didn't have to sort things out when I got it back. Vacuum hoses connected wrong, bolts taken out but not put back in, fittings on loose, bearings not adjusted correctly, grease put on brake adjusters (you're supposed to use graphite).

When I do stuff myself, it's a labor of love, when a mechanic does things, it's a labor of the love of money as they try to beat flat rate to take home twice the money for the time spent.

Yes, I don't have many nice things to say about mechanics.

It is primarily to make the car smaller overall. It is easier to manuever a smaller car. If you've ever driven an 80's lincoln, you'll know what I'm talking about. =)

it also makes it more difficult for the average person to do their own vehicle maintenance, resulting in more people taking it back to the dealer to get work done.

But primarily, it's a result of the size of the vehicle.

Bad engineering. Too many dumb people with four year degrees in the auto industry. Most engineers have no idea what "their" part that they design do. Pretty hillarious to us 'dumb' grease monkeys.
