From those for the Gamecube, I'd recommend Mario Tennis, Mario Golf, Mario Kart, and Mario Party. There are a few others that are neat as well, such as Pikmin. Donkey Konga is an absolute joy for non-gamers and gamers looking to just have fun as well.
For the Wii, Wii Sports and Wii Music look to be very fun for non-gamers. Final Furlong will be good if she likes horse racing or at least finds it mildly interesting.

It is gonna sound odd, but try the sims. It shows how to live basic life. You have to stay sanitary, feed yourself, keep up with your house and a job. And you have to raise a family. It is great way to practice real life situations without the repricutions of reality. Or if you want one to play simultaneously, i recommend any kind of fighting game such as Tekken Tag or if you like to create yourself try WWF Vs. WWE. It is a great way to take out stress with each other in a humorous way. Without the bruises. : )

If you are going to buy a game system you might want to wait until PS3 and Wii come out. Xbox 360 is a great option, I own one and love it. My husband and I often play racing games/sports games on it, but he gets mad when I beat him LOL.

do not get a ps2 it will be obsoleet in like 5 month get an xbox 360 or somthing.....as i was saying go for halo or call of duty with muti-player
