How about mountain biking, photography, bird watching, scuba diving, snorkeling, boating......

my dad is retired army special forces and he's always been into his hobbies....which, some are similar to your previous hobbies....he used to scuba dive and he has REALLY embraced photography the past 10-20 years.
he is really into nature photography, so it gets him outdoors, walking around, building blinds to get deer and other larger wildlife. he also takes his kayak out now, so he can get some neat water wildlife shots.
so, his photography really encompasses a couple of hobbies!
oh, pair it with scuba diving and that'd be another form!!!

he even built a dark room in our basement...then he went digital and now everything is computers and HUGE printers!

have fun!

cooking??? maybe take some classes....the food network can be very addictive!!!

There's a very interesting e-book available about finding lost and hidden treasures and valuables - doesn't need a metal detector or anything like that. Though that would also be an interesting hobby - I used to own one!

The ebook is low-cost and it's an enjoyable read full of ideas.

Stain Glass (and don't say its just a girls hobby, I've taught dozens of men) You get to play with sharp objects, such as glass and knives, chemicals and hot stuff such as a soldering iron.

A local stain glass shop should have beginning classes all the time for under 80.00 (including all supplies) If they demand that you buy all your tools and supplies (over 300.00), I would find another shop, that lets you rent or use there tools.

You sound like an outdoors sort of person - Have you tried Geocaching? Combination of outdoors and high tech, and it's always a bit different. (I'm addicted)
