When a woman is going to get married, it is traditional for her female family and friends to take her out for a last night of freedom- it usually involves drinking a lot of alcohol, and making a fool of themselves. The male equivalent is a stag night. Both would traditionally be held the night before the wedding, but now are usually a week or more beforehand.

In the UK it usually involves a lot of drunkeness and quite a lot of lewd behaviour.
As I recall, there's a little tale about how the term "hen night" came about. A young woman wanted to get married to a very poor man, and her father refused, as her man could not afford her dowry. All the young woman's friends came around one evening, each one carrying a present (mostly small livestock, such as hens) - which was used to make up her dowry, so she did marry her man after all. Happy ever after. All because of a party of her female friends and lots of hens.

Similar to a batchelor party, except with women. It also refers to a "Girls Night Out". it usually a term used in the UK.
They can get as wild as any men's party, strippers, male escorts performing with guests(if you get my drift).
