My Wife is in her last year at Uni. Training to be a primary school teacher. She is not sure what to do the dissertation on, so I said I would ask on here for any idea... Any ideas??

If she is in her last year, she should have a pretty good idea of where her main interests lie, but the problem is, no one ever has just one, and you know you'll get 1000 words in and wish you had picked your other favourite area.
Emotional literacy is causing a lot of interest, and would look good on her cv. Some courses now offer MA's in this area, and she should be able to find journal articles easily.
A good thing to do is to remember what drew her to education in the first place, if that interest has carried her this far, it should be good for the dissertation.

Look in education journals. There are plenty of ideas in them.

Is she doing a doctoral dissertation? If she has a master's degree she should have been exposed to a lot of educational research. Surely there is some area that she has more of an interest in than others.

The value of Talk within the primary school curriculum - can elaborate it with discussion on delivery, in science, Talk Partners, language barriers between children, etc.

Perhaps something like the the importance of play / role play and first hand experiences for all primary school pupils not just foundation and key stage one children.
