It depends on what he likes to do, but there are numerous crafts that can be done with limited mobility.

My ex-brother in law was pretty much couch bound in is apartment the last year of his life but he loved putting together models from kits and customizing them. If glue fumes are an issue there are numerous kits, although geared for younger kids, that are snap together only.

If he is interested in coin collecting, you could get him a penny book and a few dollars worth of pennies to go through to see if he finds any that he would like to collect...let him keep the ones he does and turn in the ones he doesn't to get more pennies for him to go through.

For women, as most men are not interested in this, are needlepoint, knitting and crocheting.

Any of the above could produce a craft that he could pass on to his loved ones and would build his self-esteem to show them and himself that he could do something productive.

To keep costs down on kits, you can buy them in bulk at many wholesalers or on E-Bay, or if you need just a few projects, Michael's usually has "1/2 off one regular price item" weekly in their ads. If have a Michael's store nearby and can buy one project at 1/2 price every week, you can stockpile them for later.
