If you've studied lights and colors, you'd know that white is every color combined. When you look at lather, you're seeing millions of bubbles, and all of those bubbles are creating rainbows with every color in them. All the colors combined create the color white, which is all you see.

Look at your television when there's something white on the screen. Use a non-high-definition tv. Get really close to the tv, and look at the little blocks of color (Red, Green, and Blue.) They're all lit up because, together, they create the color white. If you make one big bubble with your soap, you'll see all the individual colors, just like when you look really close at your tv screen.

Most soaps are made with glycerin and that is clear or white and then a small amount of coloring is added. It really is such a tiny amount, (1-2 drops to each ounce of glycerin) that you can't see it, so when you add water to the bar, it will come out white, which is the original color.

It just appears to be white. After adding water and creating a lather...the pigment becomes so faded and diluted that our eyes can not distinguish the faint color that still lies within.

Look closer, the bubbles themselves have all colors. The water molecules in the bubbles refract light waves.
