The answer is because the average american family has 2.5 kids. So if you have two parents and 2.5 kids seating for 5 is plenty.

Some cars are designed to seat 6 people, such as the Chevrolet Lumina. Others only seat 4 people, like Mustangs and Camaros. So I don't know why you are asking about cars only seating 5 people. It just depends on the car. It probably has something to do with making sure the driver has plenty of room to be comfortable enough to concentrate on driving.

It's a size that lots of people find convenient. Two seaters are not practical for a family with kids, and many people just don't need more than four or five seats, so they make most cars with seating for between four and six people.
