According to Boeing's factoid page about the Shuttle engines, the peak combustion temperature is 6000F which is about 3300 C (about 3000K). The exhaust temperature is a loaded question since it will fall the further the exhaust gets from the point of combustion as the gas expands. Note also this is for the shuttle main engines. The solid boosters probably behave differently.
